Ingredients
- 3 tablespoons room temperature butter
- 2 cups all-purpose flour
- 1 teaspoon baking soda
- Pinch of salt
- 1/2 cup brown sugar plus 1 tablespoon brown sugar, divided
- 2 tablespoons vegetable oil
- 1/2 teaspoon vanilla
- 1/4 cup Grand Marnier
- 2 eggs, beaten
- 1 cup Greek yogurt
- 1 cup blueberries
- 2/3 cups chopped walnuts, divided
- 1/4 teaspoons ground cinnamon
Directions
- Set an oven rack in the middle and heat the oven to 375 degrees F. Use 1 tablespoon of butter to coat an 8-by 8-inch baking pan.
- In a large bowl, whisk the flour, baking soda, and salt together. In another bowl, use a wooden spoon to beat the 1/2 cup brown sugar, vegetable oil, remaining 2 tablespoons butter, and vanilla until the mixture is pale and airy, about 4 minutes.
- Once that mixture is smooth, stir in the Grand Marnier, eggs, and Greek yogurt until everything comes together. Add the flour mixture to the sugar mixture in 2 additions, mixing thoroughly after each one.
- Split the dough in half. Press half into the prepared pan, covering the bottom. Scatter the blueberries over it, then combine 1/3 cup of chopped walnuts with the ground cinnamon and sprinkle that over the berries. Cover with the rest of the dough. Stir the remaining nuts with the remaining 1 tablespoon brown sugar and scatter it over the top.
- Bake until a toothpick poked into the middle comes out with only a few crumbs clinging to it, about 25 minutes. Cool for 5 to 10 minutes, then serve with butter.
