Bocce Pasta Salad

Ingredients

  • 1 pound dried orzo pasta
  • 3 tomatoes
  • 15 sundried tomatoes packed in oil
  • 1 small red onion
  • 40 basil leaves, one bunch basil
  • 7 ounces feta cheese
  • 1 large lemon
  • 1/3 cup olive oil
  • 1 teaspoon kosher salt
  • 1 teaspoon ground pepper

Directions

  1. Fill a pot with 4 quarts of salted water and bring it up to a boil. Add the orzo once the water is bubbling, and cook it in the salted water for 10 minutes.
  2. While the orzo cooks, mince the red onion as finely as you can manage. Cut the tomatoes into pieces that are a little larger, then cut the feta cheese into chunks about the same size as the tomatoes.
  3. Once the pasta is done, pour it into a colander and cool it down under cold water.
  4. Transfer the drained pasta to a large mixing bowl. Add the tomatoes, onions and feta, but resist the urge to stir just yet.
  5. Scatter the salt and pepper over everything. Halve the lemon and squeeze the juice into the bowl, then drizzle in the olive oil. Now you can toss it all together, gently.
