Ingredients
- 4 or 5 stems broccoli
- 3 red bell peppers
- 1/2 small bunch fresh tarragon or basil
- 1 cup sour cream
- 2 tablespoons Dijon mustard
- 1/4 cup tarragon vinegar
- 1/2 cup plus 2 tablespoons olive oil
- Salt and pepper
Directions
- Rinse the broccoli, then trim it into small florets. Remove the seeds from the peppers and cut the peppers into thin slivers. Wash the herb and chop it finely.
- Cook the broccoli in vigorously boiling water until it is tender, 4 to 5 minutes. Immediately transfer it to ice water to stop the cooking, then drain it thoroughly.
- Stir together the remaining ingredients with the chopped herb. Add half of the dressing to the broccoli and pepper slivers, then toss until everything is coated. Taste before adding more dressing; you may not need the full amount.
