Ingredients
- 1 tablespoon soy sauce
- 1 1/2 teaspoons rice vinegar
- 1 teaspoon toasted sesame oil
- 1 teaspoon sugar
- 1 bunch broccoli rabe
- 2 teaspoons salt
- 2 tablespoons canola oil
- 3 garlic cloves, minced
- 1/4 teaspoon red pepper flakes
- 1/2 teaspoon minced fresh ginger.
Directions
- Slice away the lowest 2 inches of the broccoli rabe stalks, then cut the leafy parts into rough 1-inch pieces. Get a large pot of water bubbling, drop in the broccoli rabe, and let it cook for 2 to 3 minutes, just until it softens. Tip it into a colander to drain, then move it straight into a bowl of ice water. Once it has cooled, pat it dry and keep it nearby.
- In a small bowl, beat together the soy sauce, rice vinegar, sesame oil, and sugar. Set a large skillet over medium heat and add the oil. Stir in the garlic, red pepper flakes, and ginger, and let them cook for 3 to 4 minutes. Raise the burner to medium-high, add the prepared broccoli rabe and the soy sauce mixture, and toss everything together. Cook for about 1 minute, until the greens are hot and the sauce tightens up. Add salt to taste and serve.
