Ingredients
- 4 slices bacon
- 2 Tbsp brown sugar
- 1/2 cup mayonnaise
- 1/2 tsp chipotle chili powder
- 1/8 tsp garlic powder
- 4 brioche buns
- 4 eggs
- 1 large tomato
- 1 head lettuce
Directions
- Heat the oven to 400ºF. Cover a baking sheet with foil, then set 2 wire cooling racks on top. Arrange the bacon on the racks, scatter the brown sugar over it, and gently press the sugar onto the bacon. Bake until the bacon is deeply browned and crisp, about 10 minutes for regular bacon or 20 minutes for thick cut bacon. Stay close near the end, since ovens can run differently.
- As the bacon bakes, make the chipotle mayo and prep the sandwich fixings. Stir the mayonnaise, chipotle powder, and garlic powder together in a small bowl. Cover it and chill until you need it. Cut the tomato into thick slices, rinse the lettuce and shake it dry, and split the buns in half.
- Cook the 4 eggs however you like them, fried or scrambled.
- Once the bacon is done, cool it just until you can handle it comfortably. Snap each piece in half so it sits neatly on the buns. Spread 1 tablespoon of chipotle mayo on each cut side of the bun, then layer on 1 or 2 lettuce leaves, 1 tomato slice, 1 egg, and 1 slice of bacon broken into 2 short strips. Enjoy.
