Ingredients
- 3 Tbsp packed light brown sugar
- 1 1/2 Tbsp fresh lime juice
- 2 tsp lime zest
- 1 1/2 Tbsp butter, melted
- 1 garlic clove, minced
- 1/2 tsp cayenne pepper, adjust to taste
- 4 salmon fillets, skin-on or skinless
- Salt and freshly ground black pepper
- 1 Tbsp chopped fresh cilantro, for garnish
- Lime wedges for serving
Directions
- Combine the brown sugar, lime juice, lime zest, butter, garlic and cayenne pepper in a small mixing bowl, stirring until you have a glossy paste. Set the salmon fillets in a dish, then spoon the lime mixture over them and spread it around. For skin-on salmon, coat the tops and sides; for skinless pieces, cover both the top and bottom. Use all of the mixture, then refrigerate the salmon for 30 minutes.
- Set the oven to 425 degrees. Fit a 13 by 9-inch baking dish with Reynolds Kitchens Unbleached Parchment Paper, then arrange the salmon on the parchment with room between each fillet. Add salt and pepper.
- Bake the salmon in the hot oven until it separates easily when tested with a fork, about 12 – 15 minutes, depending on how thick the fillets are.
- Scatter cilantro over the salmon and bring it to the table warm, with lime wedges to squeeze over the top. If you’d like, serve it over Coconut Rice.
