Brown Sugar Pound Cake

Ingredients

  • 1 cup unsalted butter
  • 1/2 cup shortening
  • 1 cup white sugar
  • 1 pound light brown sugar
  • 5 large eggs
  • 3 cups of all-purpose flour
  • 1/2 teaspoon baking powder
  • 1 cup whole milk
  • 1 1/2 teaspoon vanilla
  • 1 cup chopped pecans, or other nuts
  • Baker's Joy

Directions

Heat the oven to 325F. In a large bowl, beat the butter and shortening with an electric mixer until creamy, then add the sugars and beat again. Increase the mixer to high and let it go for a few minutes, until the mixture becomes paler. Add the eggs 1 at a time, mixing only until each one disappears into the batter. Sift the dry ingredients, then mix them into the batter in alternating additions with the milk and vanilla mixture. Fold in the nuts. Coat a tube or Bundt pan with Baker's Joy, scrape in the batter, and bake at 325F for 1 1/2 to 1 3/4 hours, until the top is set. Cool the cake in the pan.
