Ingredients
- 1/4 cup butter
- 1/4 cup honey
- 2-3 cloves garlic, minced
- 1-2 tablespoons fresh squeezed lemon juice
- 4 wild caught salmon fillets, skin off or on
- Lemon wedges, to serve
- Salt, to taste
Directions
- Position an oven rack about 8-inches from the heating element, then heat the oven to broil, or use the grill setting in Australia.
- Set the butter in a cast iron skillet, or in an oven-proof frying pan if you do not have a skillet. Warm it over medium heat, stirring and gently tilting the pan now and then, for about 3 minutes. When the foam drops, the butter turns golden brown, and it smells nutty, you are there.
- Stir in the honey and let it melt into the butter. Add the garlic and cook for about 1 minute, just until fragrant. Pour in the lemon juice and stir until the sauce is blended.
- Nestle the salmon fillets into the butter in the skillet, placing them skin-side down if they have skin. Cook each fillet for 3-4 minutes, basting the tops with the pan juices as they turn golden. Sprinkle with salt and pepper, to taste.
- Tuck the lemon wedges around the salmon, then move the pan to the oven. Broil, or grill, for a further 5-6 minutes, until the salmon is nicely charred on top.
- Spoon the reserved brown butter sauce over the salmon before serving. Pair it with steamed vegetables, set it over rice, or add a salad alongside.
