Butternut Squash Apple Cranberry Bake

Ingredients

  • 1 large butternut squash, peeled and cut into 1-inch cubes
  • 2 large tart cooking apples, peeled and cut into 1/2-inch thick slices
  • 1/2 cup fresh or frozen cranberries
  • 1/2 cup brown sugar
  • 1/4 cup butter
  • 1 Tbsp flour
  • 1 teaspoon salt
  • 1/2 teaspoon ground nutmeg or mace

Directions

  1. Set the oven to 350 degrees F. Butter a 7x11-inch baking dish lightly, covering the bottom and the sides. In a small bowl, stir the flour, brown sugar, salt, and nutmeg until combined.
  2. Arrange the cut butternut squash across the bottom of the prepared dish. Add the apples over the squash, scatter the cranberries on top, and cover it all with the flour and brown sugar mixture. Finish by dotting the surface with butter.
  3. Bake at 350 degrees F for 50-60 minutes, until the bake is tender all the way through and the top has a little color.
