Caprese Chicken Foil Packets

Ingredients

  • Olive oil
  • Salt
  • Garlic
  • Pepper
  • Balsamic vinegar
  • Basil leaves
  • Mozzarella cheese
  • Half
  • Oregano
  • Tomatoes
  • Chicken
  • Whole

Directions

  1. Heat your grill to medium high. Add the chicken to a medium glass bowl. Pour in the balsamic vinegar and olive oil, then add the garlic, oregano, salt, and pepper; stir until the chicken is coated.
  2. For each packet, cross 2 pieces of foil, each 12 inches long, into an X. Or, if you are using heavy duty foil, use 1 sheet for each packet.
  3. Spoon half of the chicken mixture into the center of the foil. Set the whole basil leaves over it, then scatter the tomatoes across the chicken. Fold the foil up and around the filling, pressing the edges closed to seal. Do the same with the remaining foil, chicken, and tomatoes.
  4. Grill the sealed packets on the grates, allowing about 10 minutes per side, until the chicken has cooked through but is not overdone.
  5. For the oven method, set the 2 foil packets on baking sheets and cook in a 400 degree oven, again about 10 minutes per side.
  6. Open the foil carefully because the steam inside is hot. With tongs, lift out the whole basil leaves, then arrange the mozzarella cheese over the chicken. Close the packets gently again and return them to the grill until the cheese melts, about 5 minutes.
  7. Open the packets, add a sprinkle of basil, and adjust with salt and pepper to taste. Serve.
