Caramelized White Chocolate Ice Cream

Ingredients

  • 8 ounces caramelized white chocolate
  • 1 cup heavy cream
  • 2 cups whole milk
  • 1/2 cup sugar
  • 1/8 teaspoon sea salt
  • 5 large egg yolks

Directions

  1. In a large bowl, stir the warm caramelized white chocolate together with the heavy cream. Rest a mesh strainer over the bowl and set it aside.
  2. Warm the milk, sugar, and salt in a medium-sized saucepan.
  3. In a small bowl, whisk the egg yolks until blended. Slowly whisk in half of the warm milk mixture, then pour the tempered yolks back into the saucepan.
  4. Cook the custard over moderate heat, stirring the whole time with a heatproof utensil, until it has thickened enough to coat the utensil.
  5. Right away, pour the custard through the strainer into the white chocolate mixture, then stir until everything is smooth. Set the bowl in an ice bath and stir until the mixture is cool.
  6. Refrigerate until thoroughly chilled, then churn it in your ice cream maker following the manufacturer’s instructions.
