Ingredients
- 4 large potatoes, peeled and cut into 1-inch cubes
- 1/4 cup olive oil
- 2 cloves garlic, minced
- 1 teaspoon smoked paprika
- 1/2 teaspoon cayenne pepper
- 1/2 teaspoon ground cumin
- 1/4 teaspoon sea salt
- 3 tablespoons tomato paste
- 3 tablespoons white wine vinegar
- 3 tablespoons water
- 2 tablespoons chopped fresh parsley leaves
Directions
- Heat the oven to 400 degrees F (200 degrees C).
- In a small bowl, whisk the parsley with the water, vinegar, tomato paste, salt, cumin, cayenne pepper and smoked paprika until smooth. Put the sauce aside.
- Add the garlic and olive oil to a large bowl and stir them together. Tip in the potatoes and toss until they’re coated all over, then arrange them in one even layer on a baking sheet. Roast for 20 minutes, until they’re golden and a fork slides in easily.
- Take the baking sheet out of the oven and spoon the sauce over the potatoes. Toss until everything is evenly coated, then place the pan back in the oven for 10 minutes, until the sauce is bubbling and the potatoes are fully cooked. Serve hot or at room temperature, with extra parsley on top if desired.
