Ingredients
- 1/2 cup unsalted butter, at room temperature
- Juice and zest of 1 lime
- 1 tablespoon minced cilantro
- 1 tablespoon cayenne pepper
- 1 tablespoon kosher salt
- 1 tablespoon raw sugar
- 4 rib-eye steaks
- 1 tablespoon neutral oil
Directions
- Stir the lime zest, lime juice, and cilantro into the softened butter until everything is evenly mixed. Shape the butter into a log using a small sheet of plastic wrap, then chill it in the refrigerator or freezer until firm.
- Mix together the cayenne, salt, and sugar for the spice rub. Coat the steaks with the oil, then rub the seasoning mixture over them.
- Heat a gas grill, charcoal grill, or grill pan to medium-hot, then cook the steaks until they reach your preferred doneness. Skip very high heat here, since the sugar can scorch and become bitter.
- Rest the steaks for at least 5 minutes. Take out the chilled butter, cut it into disks, and set them on the hot steaks so they melt before serving.
