Ingredients
- 1 head broccoli, stem end trimmed and stalk peeled of tough skin
- 3 tablespoons extra-virgin olive oil
- Kosher salt and freshly ground black pepper
- Fresh juice from 1/2 lemon
- 3 tablespoons honey
- 1/3 cup chopped toasted hazelnuts
- 4 ounces Manchego cheese
Directions
Heat your broiler on high, with a rimmed aluminum half-sheet pan set 6 inches underneath. Slice the broccoli head lengthwise in half, then separate the halves into individual florets so each piece keeps a long spear of stem. Put the broccoli in a large mixing bowl, add the olive oil and salt, and use your hands to rub everything together until the pieces are coated all over. Spread the broccoli onto the hot sheet tray and broil for about 5 minutes, until you see good char in places. Stay nearby, because broilers do love to have opinions. Move the broccoli to a serving plate and finish it with black pepper. Scatter the lemon juice over the top, then add the honey and hazelnuts. With a fine rasp grater, grate Manchego generously over everything. Serve immediately.
