Ingredients
- 1/4 cup plain breadcrumbs
- 1 tsp smoked paprika
- 1/2 tsp garlic powder
- 3/4 tsp salt
- 1 large egg
- 1/2 cup minced onion
- 4 oz. sharp cheddar
- 1 lb. ground beef
- 1/2 cup ketchup
- 1 Tbsp brown sugar
- 1 tsp yellow mustard
- 1 tsp Worcestershire sauce
Directions
- Heat your oven to 350ºF. Stir the breadcrumbs, smoked paprika, garlic powder, and salt together in a small bowl. In another small bowl, beat the egg just to break it up. Mince the onion finely. Cut the cheddar into rough little pieces, about the size of a small bean.
- Put the ground beef in a bowl with the seasoned breadcrumbs, beaten egg, minced onion, and chopped cheddar. Mix it all together with your hands until the add-ins are evenly worked through.
- Transfer the beef mixture to a casserole dish or a rimmed baking sheet. Pat and shape it into a rectangle that is approximately 7" long, 4" wide, and 1.5" thick.
- For the glaze, mix the ketchup, brown sugar, mustard, and Worcestershire sauce until smooth. Spoon it over the meatloaf before baking, spreading it across the top.
- Bake the meatloaf in the 350ºF oven for 50-55 minutes, until the center registers 160ºF. Take it out of the oven, let it rest for 5-10 minutes, then cut it into 8 pieces and serve.
