Cheese Sauce for Cheese Fries and Nachos

Ingredients

  • 8 ounces extra sharp cheddar cheese, grated on large holes of a box grater
  • 1 tablespoon corn starch
  • 1 can evaporated milk
  • 2 teaspoons Franks Red Hot or other hot sauce

Directions

Put the cheese in a large bowl, sprinkle in the cornstarch, and toss until the shreds are evenly coated. Move the mixture to a medium saucepan, then pour in 1 cup evaporated milk and the hot sauce. Set the pan over low heat and whisk constantly until the cheese melts and the sauce turns bubbly and thick, about 5 minutes. It may seem thin and a little grainy in the beginning, but it will smooth out and pull together as it warms. Add more evaporated milk as needed to loosen it to the consistency you want. Serve right away with fries, tortilla chips, burgers, or hot dogs. To warm the sauce again, microwave it on high heat, pausing to stir every 30 seconds, until it is completely melted.
