Ingredients
- 1 lb. gnocchi
- 1 Tbps olive oil
- 2 cloves garlic
- 1/2 lb. frozen chopped greens
- 24 oz. jar pasta sauce
- 2 Tbsp grated Parmesan
- 1 cup shredded mozzarella
Directions
- Set a large pot of water over high heat and bring it to a boil. Add the gnocchi and cook for about 3 minutes, until the pieces rise to the surface. When all of them are floating, pour the gnocchi into a colander to drain.
- Mince 2 cloves of garlic and slide them into a large skillet with the olive oil. Cook the garlic on medium for about 1 minute, just until it softens and smells fragrant. Add the drained gnocchi and keep sautéing until the outsides turn lightly golden and crisp; try not to fuss with them too much, because they need time against the pan to brown.
- When the gnocchi is a little crisp, add the pasta sauce and frozen chopped greens. Stir everything together and let it warm through, about 5 minutes. Scatter the Parmesan over the skillet, followed by the shredded mozzarella. Cover the skillet and let the cheese warm and melt. Once the cheese has melted, the gnocchi is ready.
