Ingredients
- 12 – 16 oz. turkey or pork breakfast sausage links
- 16 oz. brown Cremini mushrooms or more, washed, dried well, and cut into thick slices
- 2 tsp. + 1 T olive oil
- 1 cup grated Mozzarella cheese, or more
- 2 green onions, thinly sliced on the diagonal
Directions
- Set the broiler to heat. Rinse the mushrooms, then get them thoroughly dry in a salad spinner or with paper towels before cutting them into thick slices.
- Warm 2 tsp. oil in a 12 inch cast-iron skillet over medium-high heat. Add the sausages and cook until they are well browned, then transfer them to a cutting board.
- If the skillet needs it, clean it out, then pour in 1 T oil and place it back over medium-high heat. Once the pan is hot, add the mushrooms and cook until they begin to take on color and any moisture in the skillet has cooked away.
- As the mushrooms cook, cut each sausage diagonally into three pieces. Arrange the sausage pieces on top of the browned mushrooms, cover with a generous layer of grated Mozzarella, and slide the skillet under the broiler until the cheese is melted and just beginning to brown. This happens fast, so stay close and watch it.
- Take the skillet out of the oven and finish with the sliced green onions. Serve hot.
