Chewy Trail Mix Bars

Ingredients

  • 2 cups quick cooking oats
  • 3/4 cup sugar
  • 1/2 teaspoon salt
  • 1/4 teaspoon cinnamon
  • 1/2 cup chopped dried apricots
  • 1/2 cup peanut butter chips
  • 1/2 cup dried cranberries
  • 1/2 cup raisins
  • 1 cup roughly chopped almonds
  • 1/4 cup unsweetened shredded coconut
  • 1/4 cup light corn syrup
  • 1/4 cup honey
  • 1 teaspoon vanilla extract
  • 6 tablespoons melted unsalted butter
  • 1 tablespoon water

Directions

  1. Heat the oven to 350 degrees F. Put parchment paper into an 8- by 8-inch baking dish, leaving enough extra to hang over the sides. In a large bowl, combine the coconut, almonds, raisins, cranberries, peanut butter chips, apricots, cinnamon, salt, sugar, and oats, then set the bowl aside.
  2. In a small bowl, whisk the corn syrup, honey, vanilla, melted butter, and water until everything comes together. Pour this mixture into the bowl with the oats. Stir with a spoon or use your hands until the mixture is evenly combined.
  3. Press the mixture into the prepared pan and smooth the top. Bake for about 30 minutes, until the edges turn golden. Cool completely, then use the parchment overhang to lift the bars out of the pan. Cut into bars. Store any uneaten bars in an airtight container for up to 5 days.
