Ingredients
- 1 pound ground chicken
- 2 teaspoons soy sauce
- 1 teaspoon cornstarch
- 1 teaspoon cooking oil
- 2 green onions, chopped
- 4 ounces fresh shiitake mushrooms, sliced
- 2 teaspoons seasoned rice vinegar
- 1/2 teaspoon toasted sesame oil
- 1 large mango, diced
- 1 head of butter lettuce, rinsed, leaves separated
Directions
- In a large bowl, stir together the ground chicken, soy sauce, and cornstarch until the mixture looks evenly combined.
- Set a wok or a large sauté pan over medium heat. When the pan is hot, swirl in the oil, then add the green onions and sliced shiitakes. Cook them for about a minute.
- Turn the heat up to high, then add the chicken mixture. Use a wooden spoon to crumble the meat and move it around the pan. Continue stir-frying for 5 to 7 minutes, until the chicken is fully cooked.
- Stir in the seasoned rice vinegar, sesame oil, and diced mango. Take the pan off the heat, then taste and adjust with rice vinegar, sesame oil, or soy sauce as needed.
- To serve, spoon the filling into the curved lettuce leaves.
- For extra heat, add chili sauce by the small spoonful, or sprinkle a few chili pepper flakes into the warming oil. Fresh cilantro leaves can go over the top. Other meats, such as lamb, turkey, beef, or pork, can be used in place of the chicken, and mandarin orange slices can stand in for the mango.
