Ingredients
- 6 cups water
- 1/4 cup extra virgin olive oil
- 2 large cloves garlic, peeled
- 2 teaspoons ground cumin
- 1 teaspoon salt
- 1 cup chickpea flour
- 1 scallion, green part only, thinly sliced
- 1 lemon, cut in wedges
Directions
- Add the water, olive oil, garlic, and cumin to a medium saucepan. Set it over heat and bring everything to a boil, then let it bubble for 1 minute.
- Turn the heat down to low and whisk in the chickpea flour. Raise the heat back to high and boil the soup for 3 minutes, until it thickens to the texture of heavy cream.
- Spoon the soup into bowls, then finish with the scallion and a little freshly ground black pepper, if you want it. Put the lemon wedges alongside.
