Chili Roasted Potatoes

Ingredients

  • 3 lbs potatoes
  • 2 Tbsp olive oil
  • 1/2 Tbsp chili powder
  • 1/2 tsp cumin
  • 1/8 tsp cayenne pepper
  • 1/8 tsp garlic powder
  • 1/4 tsp onion powder
  • 1/2 tsp salt
  • Freshly ground pepper

Directions

  1. Set your oven to 400 degrees. Rinse the potatoes well, then give them a moment to shed any extra water. Cut them into 1 to 2 inch cubes.
  2. Add the potato cubes to a large bowl, then pour in the olive oil and sprinkle in the chili powder, cumin, cayenne, garlic powder, onion powder, salt, and pepper. Toss everything until the potatoes are evenly slicked with oil and spices.
  3. Line a baking sheet with foil or parchment paper, then scatter the potatoes across it. Keep them spread out rather than heaped together; grab 2 baking sheets if that is what it takes.
  4. Roast the potatoes in the hot oven for 40 minutes, until the edges are golden brown and the cut sides look blistered. The exact roasting time will depend on how large your cubes are.
