Ingredients
- 4 cups rolled oats
- 1 cup Fisher's whole almonds, roughly chopped
- 1/3 cup ground flax seeds
- 1/4 cup coconut oil, melted
- 1/3 cup honey
- 1/3 cup packed light brown sugar
- 1/3 cup Dutch processed cocoa powder
- 2 Tbsp water
- 2 tsp vanilla extract
- 1/2 tsp salt
- 1/3 cup tiny chopped semi-sweet chocolate chunks or mini chocolate chips
Directions
- Heat the oven to 325 degrees. Get an 18 by 13-inch rimmed baking sheet ready with parchment, or give the surface a light swipe of coconut oil.
- Add the oats, almonds, and flax seeds to a large mixing bowl, and toss them around until they are combined.
- In another small mixing bowl, whisk the melted coconut oil, honey, brown sugar, cocoa, water, vanilla, and sea salt together.
- Pour the cocoa mixture over the oats, then toss until the coating is spread evenly through the bowl.
- Transfer the granola to the prepared sheet and nudge it into an even layer.
- Bake for 35 minutes in the hot oven, giving the granola a toss at the halfway point and smoothing it back out afterward. It will not be crisp until after it cools, so do not judge it too early.
- Let the granola cool completely, then scatter the chocolate chunks over it.
- Keep it in an airtight container.
