Chocolate Cake Pancakes

Ingredients

  • 2 cups Betty Crocker Brownie Mix
  • 1 tsp baking powder
  • 4 Tbsp butter, melted
  • 2 Tbsp applesauce
  • 2 large eggs
  • 1/4 cup buttermilk
  • 1/4 cup milk
  • 1 tsp vanilla extract
  • Vanilla Cream Syrup, for serving
  • Banana slices or strawberries slices, for serving

Directions

Set a nonstick griddle to 350 degrees. In a mixing bowl, whisk the 2 cups brownie mix with the baking powder. Add the melted butter and applesauce, then the eggs, buttermilk, milk, and vanilla, stirring just until the batter comes together. Spoon 3 Tbsp of batter onto the griddle; if your nonstick surface is a little worn, you may want to butter it, though the pancakes tend to spread less without it. Let the pancakes cook for several minutes, until small bubbles show up on top and an edge releases when you nudge it, then flip gently and cook the other side for about 30 seconds to 1 minute. Serve warm with Vanilla Cream Syrup or the alternate serving ideas listed.
