Ingredients
- For the homemade chocolate syrup:
- 2/3 cup cocoa powder
- 1 cup sugar
- 1 cup water
- Pinch of salt
- For the soda:
- 8 ounces seltzer
- 3/4 teaspoon acid phosphate
- 3 tablespoons homemade chocolate syrup
- Ice
Directions
- In a small saucepan, mix together the cocoa, sugar, water, and salt, then set it over medium-high heat. Stir it often as it heats, and don’t wander too far once it gets close to boiling — this syrup likes to make a break for it. As soon as it boils, turn the heat down to low and let it simmer steadily until it has thickened enough to coat the back of a spatula, about 10 minutes. Take it off the heat, let it cool to room temperature, and keep it in the refrigerator.
- Pour the seltzer, acid phosphate, and chocolate syrup into a highball glass or another tall glass. Stir everything together, then add ice to fill each glass and serve right away.
