Ingredients
- 2 medium avocados
- 1 T freshly squeezed lime juice
- 3 T very finely minced red onion
- 1/4 cup very finely minced fresh cilantro
- 1/4 tsp. ground Ancho chile pepper
- 1/2 tsp. Vege-Sal
- 1/2 tsp. Green Tabasco sauce
Directions
- Remove the peels from the avocados, then cut the flesh into dice. Transfer the avocado to a glass or plastic bowl, add the lime juice, and gently toss so the pieces are coated.
- Mince the red onion and cilantro, or green onion, very finely, then add them to the bowl with the avocado. Sprinkle in the ground Ancho chile pepper, Vege-Sal, or salt, and Green Tabasco Sauce.
- With a fork, press and stir the mixture until everything is evenly combined and the avocado is mostly mashed, while still leaving a few small pieces for texture. Taste and adjust with more salt, chile pepper, or hot sauce if you want. Guacamole is at its best right after it is made, though it can sit in the refrigerator for a day or so. The surface may darken a bit, but once you stir it, the avocado underneath should still look bright from the lime juice.
