Ingredients
- 1/4 cup all-purpose flour
- 1 Tbsp brown sugar
- 1/4 tsp baking powder
- 1/8 tsp salt
- 1/8 tsp cinnamon
- 1 Tbsp chopped pecans or walnuts, optional
- 1/2 Tbsp butter, melted
- 2 Tbps milk
- 1 tsp brown sugar
- 1/2 tsp cinnamon
- 1 Tbsp powdered sugar
- 1/2 tsp milk
Directions
- Use a small mug with about 1 cup of space. Add the flour, brown sugar, baking powder, salt, cinnamon, and chopped pecans, and stir the batter’s dry ingredients together.
- Pour in the melted butter and milk, then mix until you have a thick batter.
- In another small bowl or mug, warm the butter for the cinnamon butter swirl in the microwave until melted, about 15 seconds. Mix the brown sugar and cinnamon into that melted butter.
- Spoon the cinnamon butter swirl over the batter in the mug. Fold it in gently, stopping when the mixture is only about half blended, with bold streaks of cinnamon butter running through the batter.
- Microwave the mug cake for 45-55 seconds. That timing is based on a 1100 watt microwave, and cooking time will vary with microwave wattage. The cake will give off plenty of steam as it cooks, so no need to worry. Allow it to cool for 1-2 minutes.
- As the mug cake cools, make the icing by stirring together the powdered sugar and milk in the same small bowl you used for the cinnamon butter swirl. The leftover cinnamon in the bowl will season the icing.
- Drizzle the icing over the mug cake, then enjoy it while it is still warm.
