Ingredients
- 1 1/2 cups sticky rice
- 1 cup unsweetened coconut milk
- 1/2 cup turbinado sugar
- 1/2 teaspoon salt
- 2 mangos, sliced
- 8 mint leaves, optional, for garnish
Directions
- Add the sticky rice to a small bowl and pour in enough cold water to cover it. Soak it overnight, then pour off the water.
- Transfer the drained rice to a microwave-safe bowl and add 4 cups of cold water. Set a plate over the bowl and microwave for 3 minutes, then stir the rice. Repeat the microwaving and stirring in 3 minute intervals, until the rice is tender, sticky, and has taken in the water, about 10-12 minutes total.
- Pour the coconut milk into a medium saucepan and set it over medium heat. Warm it until it is hot but not boiling, then stir in the sugar and salt until they disappear into the milk.
- Scoop the rice into a large bowl. Pour the coconut milk mixture over it and stir as the rice starts to drink it in. Leave the rice to sit for 1 hour, stirring now and then.
- Spoon the rice into servings and add the mango pieces on top. Finish with mint, if you’d like.
