Ingredients
- For the fish:
- 1 filet of cod or other white fish
- Olive oil
- Salt and pepper
- For the pesto:
- 3 cups basil leaves
- 2 tablespoons pine nuts, toasted
- 1 garlic clove
- 1/2 teaspoon salt
- 1/2 cup olive oil
- 2 tablespoons Parmesan
Directions
- Heat the grill or turn on the broiler. Coat both sides of the fish with about a tablespoon of olive oil, then add salt and pepper.
- Cook the fish on the grill or beneath the broiler until it turns opaque and flakes easily, about 3-4 minutes per side.
- While the fish cooks, add the basil, pine nuts, garlic, and salt to a food processor and blend on medium speed. Once the mixture becomes a thick paste, drizzle in the olive oil slowly while the processor runs.
- Stop the machine, then stir in the Parmesan. Add pepper to taste.
- Transfer the fish to a plate and spoon a dollop of pesto over the top.
