Ingredients
2 cups of white wine vinegar
2 cups of sugar
2 cups of fresh fruit
1 teaspoon of sea salt
Directions
In a medium bowl, combine the sea salt and sugar. Stir until the salt is completely dissolved. Place the fresh fruit in a blender or food processor and blend until smooth. Add the blended fruit to the sugar mixture and stir until combined. Pour the mixture into a large jar or container with a lid and add the white wine vinegar. Stir until combined. Seal the jar or container and place it in a cool, dark place for at least two weeks, stirring occasionally to ensure that all of the ingredients are evenly distributed throughout the mixture. After two weeks, strain out any solids from the mixture using a fine-mesh sieve or cheesecloth-lined strainer and discard them. Transfer your shrub to an airtight container and store in your refrigerator for up to one month before serving over ice with sparkling water or as part of your favorite cocktail recipe!.
