Cold Sesame Noodles

Ingredients

  • 1 pound Chinese egg noodles, such as lo mein
  • 1 teaspoon toasted sesame oil
  • 6 tablespoons tahini, sesame paste
  • 3/4 cup water, plus more as needed
  • 1 tablespoon rice vinegar
  • 4 tablespoons soy sauce
  • 1 1/2 teaspoons sugar
  • 2 cloves garlic, minced
  • 1 scallion, thinly sliced
  • 1 tablespoon minced ginger
  • Sriracha hot sauce or chili oil, to taste

Directions

  1. Set a large pot of water over high heat and bring it to a boil, then add the noodles. Once the water is boiling again, reduce the heat to a gentle simmer and cook the noodles until they are just tender, using the package timing as your guide. Drain thoroughly, rinse with cold water, and coat with sesame oil.
  2. While the noodles are cooking, place the sesame paste in a bowl and whisk in the water until it loosens to the texture of thick cream. In a separate bowl, stir together the vinegar, soy sauce, sugar, and garlic until the sugar has dissolved. Bring the mixtures together, then fold in the ginger and nearly all of the scallion.
  3. Add the sauce to the noodles and toss until everything is coated. Adjust to taste with additional soy sauce and hot sauce or chile oil, then finish with the reserved scallion.
