Ingredients
- 4 strips thick-sliced bacon, sliced crosswise into 1/2-inch pieces
- 1 small yellow onion, chopped
- 2 garlic cloves, minced
- 2 tablespoons sugar
- 1 teaspoon kosher salt
- 1/2 teaspoon freshly ground black pepper
- Several dashes hot sauce
- 1/4 cup apple-cider vinegar
- 2 pounds collard greens, stems removed, sliced into 3-inch-wide strips
- 1 cup chicken broth, or water
Directions
- Set a large skillet over medium heat. Add the bacon and cook, stirring now and then, until the pieces are beginning to color at the edges.
- Stir in the onions and continue cooking until they soften and pick up a little color. Add the garlic, salt, pepper, sugar and hot sauce, and cook briefly, just until the garlic smells fragrant.
- Pour in the vinegar. Bring it to a gentle simmer, then cook, stirring and loosening the browned bits stuck to the pan, until the liquid has cooked down by half.
- Add the collard greens along with the chicken broth, or water, and return everything to a simmer. Lower the heat to medium-low and cook, stirring occasionally, until the greens are wilted and no longer bright.
- Taste, then add more vinegar and hot sauce if needed.
- Spoon the greens onto plates with some of the juices from the pan.
