Cookies and Cream Rice Krispie Treats

Ingredients

  • 1/4 cup salted butter
  • 1 oz bag mini marshmallows
  • 6 cups Rice Krispies cereal
  • 10 oreos, chopped into bits, about the size of pebbles, there will be powder too, about 1 cup
  • 1 1/3 cups white chocolate chips
  • 6 oreos, chopped into bits, about the size of pebbles, about 1/2 cup

Directions

  1. Grease a 13 x 9 pan with butter and put it to the side. In a large non-stick saucepan over medium low heat, melt the butter, tilting and swishing it up the sides of the pan so the marshmallows are less likely to cling.
  2. Add the marshmallows and cook, stirring the whole time, until they have melted. Take the pan off the heat, add the Rice Krispies cereal, and mix gently until everything is coated. Fold in 10 chopped oreos.
  3. Transfer the mixture to the buttered pan. With a buttered spatula or greased hands, press it gently into an even layer, then set it aside.
  4. Place the white chocolate chips in a microwave safe bowl. Heat at 50% power in 30 second intervals, mixing after each round, until the chocolate is fully melted and smooth.
  5. Spread the melted chocolate evenly over the Rice Krispie Treats. Right away, before the chocolate hardens, scatter 6 chopped oreos over the top.
  6. Cover the pan and refrigerate for about 10 minutes, or leave it on the counter until the chocolate hardens instead, which will take longer. Cut into 18 squares.
