Ingredients

2 tablespoons olive oil

4 chicken thighs, skin on

Salt and pepper to taste

1 large onion, diced

2 cloves garlic, minced

8 ounces mushrooms, sliced

1/2 cup dry white wine

2 cups chicken broth

1 tablespoon tomato paste

2 sprigs fresh thyme or 1 teaspoon dried thyme leaves

2 bay leaves

8 ounces bacon, cut into small pieces

1/2 cup frozen pearl onions

3 tablespoons butter, divided

3 tablespoons all purpose flour

Chopped parsley for garnish

Directions

Preheat oven to 350 degrees F . In a shallow dish, combine the flour and salt and pepper to taste. Dredge the chicken thighs in the flour mixture, shaking off any excess. Heat 1 tablespoon of butter and 1 tablespoon of olive oil in a large oven-safe skillet over medium-high heat. Add the chicken thighs and cook until golden brown on both sides, about 5 minutes per side. Transfer to a plate and set aside. Reduce heat to medium and add remaining butter and olive oil to the skillet. Add bacon , pearl onions , bay leaves, thyme, tomato paste, garlic, onion, mushrooms, salt and pepper to taste; cook until vegetables are softened, about 5 minutes. Add chicken broth and white wine; bring to a boil then reduce heat to low and simmer for 10 minutes or until sauce has thickened slightly. Return chicken thighs to the skillet; spoon some of the sauce over them so they are covered with liquid; cover skillet with lid or aluminum foil. Place in preheated oven for 30 minutes or until chicken is cooked through.
