Creamy Grape Fruit Salad

Ingredients

  • 2 lbs seedless red grapes, washed and dried well
  • 1 lb seedless green grapes, washed and dried well
  • 6 oz. Neufchatel cheese
  • 2/3 cup light sour cream
  • 2 Tbsp honey
  • 1 1/2 Tbsp granulated sugar
  • 1 tsp vanilla extract
  • 1 – 2 Tbsp packed light brown sugar
  • 3/4 cup chopped pecans

Directions

  1. In a medium mixing bowl, beat the Neufchatel cheese with an electric hand mixer until it turns smooth and airy, stopping now and then to scrape the bowl. Mix in the sour cream, honey, granulated sugar and vanilla until everything comes together.
  2. Add the red and green grapes to a salad bowl. Spoon the sour cream mixture over them, add about 3/4 of the pecans, and toss until the grapes are coated all over.
  3. Scatter the brown sugar across the top of the fruit salad, then finish with the rest of the pecans. Chill it until you are ready to serve, and bring it out within a couple of hours.
