Crispy Cheese Tacos
Corn tortillas get a savory, crackly cheese edge in the skillet, turning a simple taco into something crisp, rich, and ready to fill.

Ingredients
- 4 ounces grated parmesan, Manchego, Cheddar, or other hard or semi-hard cheese
- 8 corn tortillas
Directions
Set 1/2 ounce of cheese near one side of a non-stick skillet, shaping it into a 5- by 2-inch rectangle. Warm the pan over medium-low heat. Once the cheese starts to soften and melt, lay 1 tortilla over it so the tortilla covers about half of the cheese. Keep cooking until the cheese is evenly golden brown, then take the pan off the heat and let it sit until the cheese cools and tightens a bit. Ease a thin spatula beneath the cheese, lifting the tortilla out of the pan carefully. Add whatever filling you like and serve immediately. Do the same with the remaining cheese and tortillas.
