Crunchy Garlic and Herb Bread Sticks

Ingredients

  • 1 cup lukewarm water
  • 2 1/4 teaspoons instant yeast
  • 11 1/4 ounces bread flour
  • 1 teaspoon salt
  • 1 teaspoon garlic powder
  • 1 tablespoon dried parsley
  • 1 tablespoon olive oil

Directions

  1. Pour the water into the bowl of a stand mixer, sprinkle in the yeast, and leave it for 1 minute to soften. Add the bread flour, then knead with the dough hook until the dough becomes smooth and stretchy. Mix in the salt, garlic powder, parsley, and olive oil, and keep kneading until the additions are fully worked through, about 2 minutes. Cover the bowl with plastic wrap and let the dough rest for 45 minutes.
  2. Heat the oven to 300 degrees. Dust your counter with flour, transfer the dough onto it, and pat it into a loose rectangle. Roll it out to an even rectangle about 10x20 inches, doing your best to keep the thickness consistent.
  3. Slice the dough into strips that are 1/2 wide and 10 inches long. Lift the strips individually, twist each one into a spiral, and arrange them on baking sheets with space in between. They will lengthen a bit as you twist, and that is exactly fine.
  4. Once the bread sticks are all on the baking sheets, bake at 300 degrees until well browned and crunchy, about 40 minutes. Transfer them to a rack and cool completely.
