Ingredients
- 1 avocado
- 1 T fresh-squeezed lime juice
- 1 large European cucumber
- 1/2 cup chopped cilantro
- 1/4 cup thinly sliced green onion
- 1 can tuna packed in olive oil
- Salt and fresh-ground black pepper to taste
- 2 T mayo
Directions
- Cut the avocado into 1/2 inch cubes. Transfer it to a bowl that has room for the finished salad, then gently coat it with one tablespoon of lime juice.
- If you like, remove a few lengthwise strips of peel from the cucumber. Slice it into fourths the long way, then cut those pieces crosswise into bite-sized chunks.
- Chop the cilantro.
- Slice the green onion thinly.
- In a small bowl, whisk the mayo with the lime juice until you have a simple dressing.
- Add the cucumber, cilantro, and green onion to the avocado, then fold everything together carefully.
- Pour in the dressing and stir only until it is mixed through.
- Pour off the oil from the tuna, then use a fork to separate it into rough chunks. Add the tuna to the salad and fold it in very gently, without too much stirring, so those pieces stay nice and chunky.
- Taste and season with salt and fresh-ground black pepper, then serve. It will hold okay in the fridge for a day, but it is much better when it is freshly made.
