Prep 15 min · Makes 4 servings

Ingredients
- 2 15 oz. cans chickpeas, garbanzo beans
- 1/2 medium red onion
- 1/2 bunch cilantro
- 2 cloves garlic
- 1 medium lime
- 2 Tbsp olive oil
- 1 tsp cumin
- 1/8 tsp cayenne pepper
- 1/4 tsp salt
Directions
- Pour both cans of chickpeas into a colander, then rinse them under cool water. Leave them there to drain while you put together the rest of the salad.
- Pull the cilantro leaves off the stems, then chop the leaves roughly. Dice the red onion, and add both to a large bowl.
- For the dressing, juice 1 lime into a bowl, then mix in the olive oil, cumin, cayenne pepper, and salt. Mince 2 cloves of garlic very finely and stir them in too. Mix until combined, then taste and adjust the salt to suit you.
- Transfer the drained chickpeas to the bowl with the cilantro and onion, then pour in the dressing. Stir until everything is coated, then serve. For a more pronounced flavor, refrigerate the salad before serving so it has time to sit.
