Ingredients
- 3-4 Tbsp vegetable oil
- 1 pound ground turkey
- 1 chopped onion
- 1-2 chopped fresh red chiles, optional
- Salt to taste
- A 1-inch piece of peeled ginger, grated fine
- 2 garlic cloves, minced
- 1 Tbsp garam masala, or curry powder
- 1 teaspoon turmeric
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1/2 cup water
- 2 large Yukon Gold potatoes, peeled and cut into 1-inch chunks
- 2-4 Roma or other plum tomatoes, diced
- 1 cup fresh or frozen peas
- 1/2 cup chopped cilantro or parsley
Directions
- Set a large lidded pot over medium-high heat and warm the vegetable oil. When the oil is hot, put in the ground turkey and spread it across the bottom of the pot.
- Give the meat space, so if the pot is too full, brown it in batches. Let the turkey cook undisturbed until it starts to take on color. Add the chopped onion and chiles, then stir and sauté for 4-5 minutes, until the onion begins to turn golden in spots. Season everything with salt.
- Stir in the grated ginger and garlic, making sure they are mixed through the turkey, and cook for another 1-2 minutes.
- Add the garam masala, turmeric, cumin, coriander, water, and potatoes. Stir it all together, cover the pot, and lower the heat to medium-low. Let it simmer for 15-20 minutes, until the potatoes are tender.
- Once the potatoes are done, stir in the diced tomatoes and peas. Cover the pot again and cook for 2-3 minutes. Taste, and add more salt if it needs it.
- Just before serving, fold in the chopped cilantro. Serve it on its own, or with flatbread or white rice.
