Ingredients
- 1/2 head cauliflower, chopped into very small pieces
- 2 T peanut oil or grapeseed oil
- 1 tsp. cumin seed
- 1/2 cup finely chopped red onion or shallots
- 1 tsp. sweet curry, or more to taste
- 1/2 tsp. hot curry, or more to taste
- Salt and pepper to taste
- 1/4 cup or more fresh cilantro, chopped
- 1 fresh lime, cut to squeeze over when eating
Directions
- Choose a large frying pan with enough surface area for the cauliflower to sit in a single layer.
- Set the pan over medium-high heat and let it warm for 30 seconds. Pour in the oil, then give it about 1 minute to heat.
- Scatter in the cumin seeds and sauté for 30 seconds.
- Add the onion, cauliflower, curry powders, salt, and pepper. Cook for 6-8 minutes, stirring now and then rather than constantly, so the onion has time to caramelize and the cauliflower can take on a little color. You want the cauliflower tender all the way through, with a bit of snap left.
- Stir in most of the chopped cilantro or whichever herb you are using, then transfer everything to a serving dish.
- Sprinkle the remaining chopped cilantro over the top.
- Serve with the cut limes for squeezing over.
