Ingredients
- 10 eggs
- 1/4 cup mayonnaise
- 2 teaspoons Dijon mustard
- 3/4 teaspoon paprika
- Salt
- 1 jarred roasted red pepper, rinsed and dried
- 5 black olives, cut into 1/8 inch rings.
Directions
- Put the eggs in a large pot and add enough cold water to cover them. Set a lid on the pot and bring the water up to a boil. Once it reaches a boil, take the pot off the heat and leave the eggs covered in the hot water for 10 minutes.
- Pour off the water and allow the eggs to cool a bit. Peel them, then slice each egg in half.
- Gently remove the yolks and transfer them to a medium bowl. Add the mayonnaise, mustard, and paprika, then mix until combined. Add salt to taste.
- Spoon the yolk mixture back into the egg halves. Place an olive ring on each one to make the pupil.
- Cut the roasted red pepper into the thinnest strips you can manage. Lay a few strips around each olive so they look like veins, then do the same with the rest of the eggs.
