Duck Sauce

Ingredients

  • 1/2 lb plums, pitted and roughly chopped
  • 6 oz dried apricots, roughly chopped
  • 1 cup apple juice
  • 1/4 cup rice wine vinegar
  • 3 tablespoons light brown sugar
  • 2 teaspoons soy sauce
  • 1 teaspoon grated fresh ginger
  • 1/4 teaspoon mustard powder
  • 1/4 teaspoon crushed red pepper

Directions

  1. Combine the plums and apricots in a medium saucepan, then add the apple juice, rice wine vinegar, light brown sugar, soy sauce, fresh ginger, mustard powder and crushed red pepper. Set the pan over medium heat and bring everything to a boil.
  2. Lower the heat so the mixture gently simmers, and cook, stirring now and then, until the fruit has fully broken down and the sauce has thickened, about 30 minutes.
  3. Blend the sauce until it is completely smooth, using either an immersion blender right in the pan or a regular blender.
  4. Spoon the sauce into a bowl and use it right away, or pack it into an airtight container and refrigerate it for up to 3 weeks.
