Ingredients
- 1 1/2 cups all purpose flour
- 1/2 teaspoon baking powder
- 1/2 teaspoon salt
- 1 tablespoon Earl Grey tea leaves
- 6 tablespoons unsalted butter, at room temperature
- 1/2 cup sugar
- 1 egg
- 1/2 teaspoon vanilla.
Directions
- Add the flour, baking powder, salt, and tea leaves to a food processor. Pulse 6 times, until the tea is broken down into fine pieces.
- In a stand mixer bowl fitted with the paddle attachment, cream the butter and sugar until light and fluffy, about 4 minutes. Mix in the vanilla, then add the egg. Pour in the dry mixture and beat only until the dough comes together. Cover the dough in plastic wrap and refrigerate it for 1 hour.
- Set the oven racks in the upper and lower middle positions, then heat the oven to 350 degrees F. Line 2 baking sheets with parchment paper.
- Dust a clean work surface with a little flour. Roll the dough to 1/8-inch thickness. Use any cookie cutter you like to cut the dough, then move the cookies onto the prepared baking sheets. Bake for about 12 minutes, until the edges are just turning golden. Cool the cookies on the baking sheets for 5 minutes, then transfer them to a wire rack to cool completely.
