Ingredients
- 1 cup yellow cornmeal
- 1 cup all-purpose flour
- 1/4 cup sugar
- 4 tsp baking powder
- 1/2 tsp salt
- 1 cup milk
- 1 large egg
- 1/4 cup cooking oil
Directions
- Set the oven to 425 degrees. Grease your baking vessel with non-stick spray, or go with butter for a little more flavor; use a 9-inch pie plate, a cast iron skillet, or an 8x8 casserole dish.
- Grab a large bowl and mix the cornmeal, flour, sugar, baking powder, and salt until the dry ingredients look evenly blended.
- In another bowl, whisk the milk, egg, and oil together.
- Add the wet mixture to the dry mixture, then stir only until the batter is moistened. Don’t get carried away here; a few lumps are perfectly fine.
- Scrape the batter into the greased dish. Bake for about 20 minutes, until the edges and top have turned golden brown. Slice into 8 pieces and serve.
