Easy Low-Carb Air Fryer Fish Sticks
Crisp almond-flour fish sticks made in the air fryer are a low-carb way to turn thick white fish fillets into an easy, dip-ready dinner.
Prep 15 min · Cook 10 min · Total 25 min · Makes about 16 fish sticks

Ingredients
- 4 pieces of cod, halibut, or other thick white fish fillets
- 2 eggs, well beaten
- 1 cup almond flour
- 2 tsp. Fish Rub
- 1/4 tsp. freshly-ground black pepper
- Tartar Sauce for serving
Directions
- If the cod, halibut, or other thick white fish pieces are frozen, thaw them overnight in the refrigerator. Drain the fish thoroughly, then blot it dry with paper towels. Slice the fish crosswise into short pieces about 1 inch wide. You should get about 16 strips from 4 fish fillets, though a smaller Air Fryer may not hold all of them in a single batch.
- Set out 2 bowls. Put the beaten eggs in 1 bowl, and in the other bowl stir together the almond flour, Fish Rub, and a little freshly-ground black pepper.
- Set the Air Fryer to 390F/200 C. If your model needs preheating, do that now. Spray the Air Fryer basket with non-stick spray.
- To coat the fish, dip each strip into the egg first, then move it to the almond flour mixture. Use your fingers to scatter the almond flour over the fish so each piece gets a light coating. As each fish stick is coated, place it in the Air Fryer basket.
- Cook the fish for 10-12 minutes. Begin checking at about 7-8 minutes to decide whether the pieces need to be rotated. Turn them over 1 time if you like, though it may not be necessary since the Air Fryer moves hot air around the food. At 10 minutes, check whether the fish needs a little longer.
- The fish is ready when it is lightly browned on the outside and feels firm when touched.
- Serve the fish hot, with Tartar Sauce or whichever dipping sauce you prefer.
- If you have more fish sticks than you plan to eat at 1 time, refrigerate the extras and warm them again in the Air Fryer.
- To make this without an Air Fryer, use these ingredients with the cooking method from Whole Wheat Panko and Almond Crusted Oven-Baked Fish Sticks. That recipe is not low-carb, so stick with these ingredients for low-carb fish sticks.
