Easy Low-Carb Air Fryer Salmon with Mustard-Herb Sauce

Ingredients

  • 4 salmon fillets, thawed if frozen
  • 4 tsp. olive oil, for rubbing on salmon
  • 2 tsp. fish rub, for rubbing on salmon
  • 1/4 cup sour cream
  • 3 T mayo
  • 1 T Dijon mustard, or slightly more
  • 1 T lemon juice
  • 1 T finely chopped fresh parsley
  • 1 T finely chopped green onion
  • 1/2 tsp. dried dill weed

Directions

  1. If the salmon is frozen, move it to the refrigerator to thaw overnight. When it is time to cook, pour off any liquid and blot the fillets dry if they need it. Coat each piece lightly with olive oil, then season with Szeged Fish Rub or the fish rub you like best. Arrange the salmon on the air fryer rack, and leave it out to lose its chill while you prepare the sauce.
  2. Chop the green onions and fresh parsley finely. In a bowl, whisk the sour cream, mayo, Dijon mustard, parsley, green onion, and dried dill until smooth and combined. Taste, then add a little more Dijon Mustard if you want a sharper sauce.
  3. Set the Air Fryer to 400F/200C. Cook the salmon for 6 minutes, then test it by gently pressing the top with your finger. It is ready when it feels just barely firm, not hard. If your fillets are thicker, they may need a minute or two more.
  4. Serve the salmon hot, with the Mustard-Herb Sauce alongside.
