Ingredients
- Four 6-8 oz. fish fillets that are about a half-inch thick
- 1 tsp. Szeged Fish Rub, for rubbing on the fish.
- 1/2 cup mayo
- 4 T freshly-grated or coarsely-grated Parmesan
- 1/2 tsp. garlic powder
- Coarse ground black pepper to taste
Directions
- Thaw the fish overnight in the refrigerator, then drain it thoroughly. If the fillets are very damp, sandwich them between 2 paper towels and gently press away the extra moisture.
- Set the fish on a cutting board, coat each side with Szeged Fish Rub or the brand you like best, and leave it out to lose its chill while the oven heats to 400F/200C.
- In a small bowl or a glass measuring cup, stir together the mayo, the coarsely grated Parmesan, and the garlic powder. It should be thick, so take a moment to work it into an even mixture.
- Leave the fish on the cutting board and use a rubber scraper to cover the top of each fillet with an even coating of the mayo mixture. It is a lot tidier to do this before the fish goes into the baking dish.
- Move the fillets gently into the baking dish, choosing the smallest one that will hold them all. Sprinkle fresh-ground black pepper over the topping to taste.
- Place the dish in the upper half of the oven and bake for about 12 minutes, until the fish starts to feel firm when you press the side with a fork; thicker fillets may need more time.
- Turn the oven to BROIL and let the topping brown for 3-4 minutes, watching closely. Serve hot.
