Easy Pie Dough

Ingredients

  • 2 1/2 cups all-purpose flour
  • 2 tablespoons sugar
  • 1 teaspoon kosher salt
  • 2 1/2 sticks unsalted butter, cut into 1/4-inch pats
  • 6 tablespoons cold water

Directions

  1. Add two thirds of the flour to the food processor bowl, along with the sugar and salt. Pulse twice to mix everything. Scatter the butter pieces across the top, then pulse in short bursts until the flour disappears and the dough starts gathering into clumps, about 25 quick pulses.
  2. With a rubber spatula, redistribute the dough so it sits evenly in the food processor bowl. Add the remaining flour over the top and pulse just until the dough breaks apart slightly, about 5 short pulses.
  3. Move the dough into a large bowl. Sprinkle the water over it, then use a rubber spatula to fold and press until the dough holds together in a ball. Cut the ball in half, shape each portion into a 4-inch disk, wrap both tightly in plastic, and chill for at least 2 hours before rolling and baking.
