Ingredients
- 2 Tbsp butter
- 1 small yellow onion
- 1 can pumpkin puree
- 3 cups chicken broth
- 1/2 tsp chili powder
- 1/4 tsp nutmeg
- 1/2 tsp smoked paprika
- 1/4 tsp cayenne powder
- Freshly cracked pepper
- Salt to taste
- 4 Tbsp pepitas, pumpkin seeds
- 4 Tbsp sour cream
Directions
- Chop the onion into dice, and put it in a medium saucepan with the butter. Set the pan over medium heat and cook, stirring now and then, until the pieces turn tender and see-through, about 3 minutes.
- Scoop in the pumpkin purée, then pour in the chicken broth. Add the smoked paprika, then the chili powder, cayenne pepper, nutmeg, and freshly cracked pepper. Give everything a good stir, and let the pot reach a gentle simmer.
- Keep the soup at that simmer for 10 minutes. Take a taste, then season with salt until it’s right; 1/4 tsp was the amount used here.
- Ladle it up with pepitas scattered on top and sour cream swirled through.
